Homemade Chicken Noodle Soup

A clear, comforting soup that is just as good on a sick day as on any other.

Ingredients

  • Baq-baq chicken necks or chicken — 700 g
  • Water — 2.5 liters
  • Potatoes — 3
  • Carrot — 1
  • Onion — 1
  • Thin egg noodles — 150 g
  • Bay leaves — 2
  • Salt and black pepper — to taste
  • Fresh herbs (dill, parsley) — 1 bunch

Directions

  1. Thaw the chicken, place it in a pot, cover with cold water, bring to a boil and skim off the foam.
  2. Add a whole onion and the bay leaves and simmer over low heat for 40 minutes. Keep it at a gentle simmer so the broth stays clear.
  3. Remove the onion and bay leaves. Take out the meat, pull it off the bones and return it to the pot.
  4. Add the diced potatoes and carrot and simmer for 10 minutes.
  5. Add the noodles and cook according to the package directions (usually 5–⁠7 minutes), then season with salt and pepper.
  6. Sprinkle with chopped herbs and serve hot.
