Duck breast with crisp skin and a sweet-tart apple sauce, a restaurant-worthy dish for special occasions.

Ingredients
Baq-baq skin-on duck breasts — 2 (about 500 g)
Tart apples — 2
Butter — 20 g
Honey — 1 tbsp
Lemon juice — 1 tbsp
Ground cinnamon — a pinch
Salt and black pepper — to taste
Directions
1Thaw the duck breasts and pat them dry. With a sharp knife, score the skin in a crosshatch pattern without cutting into the meat, then season with salt and pepper.
2Place the breasts skin side down in a cold skillet and cook over medium heat for 8–10 minutes, until the fat renders and the skin is crisp. Pour off the excess fat as you go.
3Flip and cook for another 4–6 minutes, then let the meat rest for 5 minutes.
4In the same skillet, melt the butter and sauté the apple wedges for 3–4 minutes.
5Add the honey, lemon juice and cinnamon and cook for another 2–3 minutes, until the apples are soft and the sauce has thickened.
6Slice the duck on the diagonal and serve with the apple sauce.
